Why Salva? Named Salva, "which means save", because it was the cheese that made it possible to save and keep the milk that was produced in excess. It is a tasty and delicious cheese, recognized in all industry national events and considered "a characteristic and typical product of the Cremona[Crema] area" to be safeguarded. Since January 12, 2012 the European Union awarded to Salva Cremasco a P.D.O. certificate. We recommend trying it with tighe peppers cut in strips with oil and salt, or with a quince puree. Without added preservatives.
