Mini-pumpkin pancakes


for 6 people

You can serve them as a dessert or as a snack to accompany roasts. With the following quantities, you will be able to prepare about thirty.

Ingredients:

1 kg of pumpkin, cut into cubes
100 g (180 ml) of flour for desserts
5 ml of baking powder
2 ml of salt
1 beaten egg
sunflower oil to fry the pancakes
100 ml of sugar
15 ml of fine cinnamon

Preparation

  1. Steam or boil the pumpkin until it is soft.
  2. Drain the excess water and chop the pumpkin very well.
  3. In a bowl, mix it with flour, baking powder and salt.
  4. Add the beaten egg and mix well.
  5. In a pan, as soon as the oil is hot, fry the balls with the pumpkin mixture.
  6. Turn them from time to time to have the same color everywhere and then let them drip on baking paper.
  7. Serve the hot pancakes with a little sugar and cinnamon.
