Clean the shrimp tails keeping the head and marinate them with lime juice and extra virgin olive oil. Process the ricotta bio with the salt, the extra virgin olive oil, the lime peel and fresh fennel. Grill the marinated shrimp tails, on a hot plate and once ready lay them on the rye crackers together with a spoonful of organic ricotta cream flavored with lime and fennel.
